Drappier Clarevallis is the certified organic cuvée of Maison Drappier, a champagne inspired by Clairvaux Abbey, whose Latin name is Clarevallis.

Founded by Saint Bernard in the 12th century, the Cistercian abbey of Clairvaux lies a few kilometres from Urville, where the monks were already planting vines. Drappier honours this heritage with a champagne from organically farmed vines, partly ploughed by horse. Pinot Noir leads the blend, completed by Meunier, Chardonnay and a touch of Blanc Vrai, the old Champagne name for Pinot Blanc. The result is a pure, taut, low-dosage champagne.

Key facts

  • Origin: France, Champagne, Côte des Bar, Urville
  • Producer: Champagne Drappier
  • Grapes: Pinot Noir 75%, Meunier 10%, Chardonnay 10%, Blanc Vrai 5%
  • Dosage: 4 g/L, liqueur matured in oak casks
  • Viticulture: certified organic
  • Size: 75 cl

Tasting notes

  • Colour: Pale gold with grey glints, very fine and persistent mousse
  • Nose: Elderflower, violet, chalky minerality
  • Palate: Balanced tension, Pinot fruit flesh rounding out the minerality, pleasant bitterness on the finish

Serving and storage

Serve it at around 7 °C, as an aperitif or at the table, in a white wine glass. It can be kept for a few years in the cellar and gain in complexity. Store the bottle lying down, in a cool place away from light.

Food pairing

Sea bream ceviche with grapefruit, langoustines with crunchy vegetables, summer salads, oysters or marinated raw fish. Its purity loves briny and tangy cuisine.

Yes. Clarevallis comes from certified organic vines on the Urville slope. It is vinified by gravity, without filtration, with estate yeasts and very little sulphur.

Who is Maison Drappier?

Founded in 1808 in Urville, in the Côte des Bar, Maison Drappier is a family house now run by Michel Drappier and his children. A recognised Pinot Noir specialist, it grows its vines on the Kimmeridgian limestone of the Aube and ages its wines in 12th-century Cistercian cellars.

Frequently Asked Questions

How to choose between wine, champagne, spirits, liqueur or chartreuse?

It all depends on the occasion (and what you feel like!).

  • Wine: to go with a good meal.
  • Champagne: for aperitifs and celebrations.
  • Spirits: to sip slowly, for lovers of character.
  • Liqueurs and Chartreuse: as a digestif, neat or on ice.

Are your products exclusively of French origin?

No, our cellar is open to the world! Although we favour French gems, we also select treasures from elsewhere.

What is the difference between a liqueur and a chartreuse?

Chartreuse is a herbal liqueur made by Carthusian monks according to a secret recipe. It is a liqueur , but not all liqueurs are Chartreuse.

Which products do you select?

We select great houses and renowned estates: iconic cuvées, vintages and limited editions.

At what temperature should you serve your alcoholic beverages?

Red wines: 15 to 17 °C

Champagnes: 8 to 10 °C, and 10 to 12 °C for great vintages

Spirits: room temperature
